German Sauerkraut
German Sauerkraut just consists of salt and cabbage so don't buy it but make it yourself. It will taste much better than if you buy it in the supermarket.
5 kg cabbage (Weißkohl) 100 gr salt (Salz)
To produce Sauerkraut you need fresh white cabbage. Remove outer layer of leaves
and cut it into halves and remove the core. Then chop it into small pieces or shred it with a food processor.
Get a 5 gallon crock (Steintopf) or a large enamel container or glass but never use aluminium utensils. Clean your container well.
Now you put layers of cabbage and salt into the crock.
