German Potato Salad Recipe

Try this German Potato Salad Recipe.

For 4 servings:

3 cups diced peeled potatoes
4 slices bacon
1 small onion, diced
1/4 cup white vinegar
2 tablespoons water
3 tablespoons white sugar
1 teaspoon salt
1/8 teaspoon ground black pepper
1 tablespoon chopped fresh parsley

DIRECTIONS

1. Take a pot and put the potatoes into it and fill it with enough water to cover. Bring to a boil and cook them for about 10 minutes or until the potatoes can be easily pierced with a fork. Drain them and set them aside to cool.

2. Place the bacon in a large deep skillet over medium-high heat. Fry it until it is brown and crisp and turn it as needed. Then remove it from the pan and set aside.

3. Add the onion to the bacon grease and cook it over medium heat until it is brown. Now you add the vinegar, water, sugar, salt and pepper to the pan. Bring all this to a boil and add the potatoes and the parsley. Take the bacon and crumble half of it in.

4. Heat it through then transfer it to a serving dish. Crumble the rest of the bacon over the top and serve warm.
