What you need:
500 gr mincemeat, 75 gr whipped cream, 30 gr butter, 30 gr flour, 30 gr caper,
1 dated biscuit (bun), 1 onion, 1 egg, 1 egg yolk, 1 teaspoon medium-hot mustard, a few dashes of lemon juice, salt, pepper
How you do it!
Get a biscuit (Brötchen) and soak it in cold water.
Chop the onions fine and put them together with the mincemeat and the egg into
a dish. (Schüssel)
Knead all that to an even dough. After that flavour with salt, pepper and mustard.
Now form 12 balls (Klopse).
Heat up salty water in a pot and put the balls into it for ten minutes.
After that, take them out and pour the liquid (stock) through a colander until you have 1/2 liter of liquid.
Heat up some butter in a pot, put the flour in and sweat it. Pour the stock over it while stirring constantly and let it simmer for five minutes at low heat
In the meantime get the caper drained and whisk the whipped creme together with the
egg yolk.
Pour this egg mixture carefully into the stock, while stirring constantly. Don't let it boil.
At the end flavour the sauce with salt, pepper and some lemon juice.
After that put the balls (Klopse) and caper into it.
Get some boiled potatoes and eat them together with the Königsberger Klopse.
Schweinebraten (Roast pork for two people)
What you need:
500 gr roast pork, 1 onion, 1 tablespoon of butter salt, pepper, mustard,
1/4 liter vegetable stock, flour
How you do it:
Season the roast pork strongly with salt and pepper.
Then smear the mustard around it.
Peel the onion and cut it into small pieces.
Heat up 1 tablespoon of butter in a pot and put the roast pork into it and fry it.
Put the onions into it and 2 cups of water.
Let the whole lot boil down and then pour the vegetable stock (1/4 liter) over it.
Let it boil down again and then pour again 2 cups of water over it.
Then finally let it boil down again and pour another 2 cups of water over it.
Taste the sauce and add salt and pepper if necessary.
Pour some flour into it to make it a bit thicker.
If you like you can add a shot of sour creme.
Eat the Schweinebraten together with boiled potatoes and mixed vegetables.
Bohneneintopf (Succotash)
What you need:
500 gr green beans, 500 gr potatoes, 400 gr beef, 1 onion, 3 tablespoons
concentrated butter, salt, pepper, savory,
How you do it:
Cut the meat and the onions into small cubes. (cube it)
Rost it gently in concentrated butter.
Flavour it with a bit of salt and pepper.
Fill up with water untill beef is covered completely.
Let it boil for half an hour.
After half an hour you add the beans and the cubed potatoes and let it cook.
Add some savory.
After that distribute it in equal portions to soup plates.
Bohneneintopf is a complete meal by itself. But you can eat some bread with butter with it.
Linseneintopf (Lentils soup, stew, notpod)
What you need:
650 gr smoked goose breast
500 gr Potatoes
400 gr brown Lentils
150 gr Purree
1 bunch of Greens
1 bunch of Marjoram
1 bunch of Parsley
1 Onion
5 Juniper berries
3 Cloves
2 Bay Leaves
2 Parsley roots
4 Table spoons of white wine vinegar
1 Table spoon of Sugar
Black pepper (freshly grinded)
Peel the onion and spike it with the cloves and the bay leaves.
Fill a pot with 2 liter cold water and put the goose breast, the onion and the
juniper berries into it.
Let all this boil up once, then put the lentils into it and let it cook at low heat for about 20 minutes. Don't put a lid on the pot.
In the meantime you clean the greens and cut it into cubes.
Wash the parsley roots and the potatoes, peel them and cut them into cubes as well.
After this put it all into the pot to the lentils and let it cook at low heat for 25 minutes.
Remove the foam from the lentils and take out the onion and the spices.
Cut the purree into fine rings, roughly chop the marjoram and the parsley and put all that into the pot to the lentils and let it cook at low heat for another 10 minutes.
After that take out the goose breast and cut it into small slices. Then season to taste the lentilsoup (notpot, stew) with pepper, vinegar and sugar.
